Chinese Lettuce Wraps With Chicken


Prep Time: Not Too Long
Cook Time: Rather Short

Ingredients

  • 1 pound boneless, skinless chicken breast, diced very finely, slightly larger than minced
  • 1 finely diced medium to large carrot
  • 2 green onions, chopped 
  • 2 cloves garlic minced fine
  • 8-12 leaves of Boston lettuce, or similar, such as butter lettuce
  • 3 tablespoons of vegetable oil

For the sauce

  • 3 TBL low sodium soy sauce
  • 3 TBL rice vinegar
  • 2 TBL hoisin sauce
  • 1 TSP sugar
  1. Mix together the ingredients for the sauce and stir until everything is dissolved.
  2. In a large pan, heat up vegetable oil over high heat and add the garlic and carrots. Stir-fry for 20 seconds.
  3. Toss the chicken pieces into the pan and cook for a minute.
  4. Add the sauce and stir-fry with the chicken pieces for another couple minutes, until the chicken is cooked.
  5. Divide equal amounts of the chicken and vegetables into the butter lettuce cups.
  6. Sprinkle the chopped green onion over the chicken for garnish.
