Chinese Lettuce Wraps With Chicken

Ingredients
- 1 pound boneless, skinless chicken breast, diced very finely, slightly larger than minced
- 1 finely diced medium to large carrot
- 2 green onions, chopped
- 2 cloves garlic minced fine
- 8-12 leaves of Boston lettuce, or similar, such as butter lettuce
- 3 tablespoons of vegetable oil
For the sauce
- 3 TBL low sodium soy sauce
- 3 TBL rice vinegar
- 2 TBL hoisin sauce
- 1 TSP sugar
- Mix together the ingredients for the sauce and stir until everything is dissolved.
- In a large pan, heat up vegetable oil over high heat and add the garlic and carrots. Stir-fry for 20 seconds.
- Toss the chicken pieces into the pan and cook for a minute.
- Add the sauce and stir-fry with the chicken pieces for another couple minutes, until the chicken is cooked.
- Divide equal amounts of the chicken and vegetables into the butter lettuce cups.
- Sprinkle the chopped green onion over the chicken for garnish.
